Batter-Fried Zucchini

Ingredients:
1 cup flour
1 egg, lightly beaten
1 cup milk
2 med./small zucchini
Oil for deep frying
Instructions:
Cut zucchini into thin rounds (I use mandolin)
Lay out enough paper towel to hold the zucchini rounds in a single layer.
Lightly sprinkle the rounds with salt and cover with more paper towel.
This will absorb the extra moisture from the zucchini (Let them sit like that for at least 2 hours.
Mix the flour and milk together.
Prepare the oil in a skillet and heat to 340 degrees.
Start dipping the zucchinis in the batter (until there are about 24).
Remove that first batch from the batter and place in the heated oil.
Once the are lightly goldened on one side, turn over to finish cooking.
Place them on a paper towel lined serving plater and continue with remaining zucchini until they are all cooked.
Enjoy as a side dish with breaded cutlets or your favorite main dish.
