Frittata with Veggies & Bacon

Topped off with a cilantro lime vinaigrette
Topped off with a cilantro lime vinaigrette

Ingredients:

6 bacon cut into ½ into slices

½ cup of chopped red bell pepper

¼ cup of chopped leeks

¾ cup of grape tomatoes cut in half

6 eggs

½ sour cream

1 cup of shredded Monterey Jack cheese

1 avocado chopped

2 tbsp of lime vinaigrette

Largely chopped cilantro for garnish

 

Directions:

Heat oven to 350 degrees

Fry bacon in in medium cask iron skillet on medium for 4 mins. Add the peppers, leeks and ½ cup of the tomatoes and cook for 3 to 5 minutes more. Remove from the heat.

In a bowl, whisk eggs and sour cream. Add

 the veggie in skillet and mix well.  Bake for 18 mins.  Remove the skillet from the oven and spread the cheese over the top.  Return to the oven and bake an additional 5 minutes.

In the meantime, toss the avocado and remaining tomatoes in with the dressing.  Add this to the top of the frittata.  Sprinkle the cilantro over and serve.
